What is an eco-friendly restaurant?

An eco-responsible restaurant is an establishment that implements practices and measures to reduce its impact on the environment. These restaurants take a sustainability conscious approach by integrating environmental, social and economic considerations into their daily operations.

This includes but is not limited to:

  • Local and organic supply: They prefer organic food products, grown without pesticides or chemical fertilizers. They are also looking to source from local producers, thereby reducing emissions from freight transportation.
  • Waste management: They implement recycling and composting practices to reduce the amount of waste sent to landfill. Some eco-friendly restaurants are also reducing their use of single-use plastic by using sustainable alternatives such as glass containers or compostable materials.
  • Responsible water and energy consumption: They ensure optimal water consumption by installing water-efficient equipment, such as low-flow taps and rainwater recovery systems. In addition, they adopt measures to reduce their energy consumption by using energy-efficient light bulbs, implementing efficient heating and cooling systems, and raising awareness among their staff of the importance of energy conservation.
  • Responsible Transportation Choices: Some eco-friendly restaurants encourage their customers and staff to choose sustainable modes of transportation, such as cycling, public transit or carpooling. They can also offer charging stations for electric vehicles.

To certify this environmental approach, eco-responsible restaurant labels have emerged in recent years. These independent auditors study the file of each applicant for the label to ensure the good conduct of the ecological and social criteria of each. These labels allow customers to find eco-responsible restaurants in line with their values and that promote sustainable development in the restaurant industry.

La Cabro d’Or, gastronomic restaurant labeled eco-responsible

Since 2023, our gastronomic restaurant durbale La Cabro d’Or has obtained the label «Green Food».
The latter rewards the environmental approach of restaurants and attests to our desire to act for the environment, whether on our choices of raw materials, our reduction in energy costs or the management of our waste…

At the head of the Cabro d’Or kitchens since 2001, Michel Hulin is part of a local cuisine by working with local producers selected for the quality of their product and for their commitment. Among them, the Jardin des Alpilles for fruit and vegetables, the Gaec Gillet in Aureille for cheeses… Supporting and promoting their hard work to «eat better» seems obvious to us, and those, since the creation of the restaurant! In addition to these local artisans, Chef Michel Hulin works the vegetables of our organic vegetable garden certified Ecocert. The Green food label also rewards our efforts in energy management, waste sorting and other criteria included in the Charter for sustainable gastronomy.

This eco-responsible certification is in line with our values and our long-term objectives so that the five-star hotel Baumanière Les Baux-de-Provence continues to reflect and take action to address ecological issues.

Baumanière, an eco-friendly 5-star domain

Our gourmet restaurant is like our 5-star Domaine in Baux-de-Provence: eco-responsible and concerned about our societal impact. Since its creation in 1945, Baumanière is part of this approach in favor of the environment and acts locally to promote the terroir of the Alpilles and all its riches.

Our Spa uses the products «Une Olive en Provence», company of Maussane-les-Alpilles, during treatments and other massages. The lighting of the Domaine is photovoltaic and our two vegetable gardens are organic and provide our two gourmet restaurants, the Oustau de Baumanière, three stars in the Michelin Guide and La Cabro d’Or. About twenty nest boxes have been installed on the Domaine to accommodate small birds (tits, redtails with white foreheads, etc.), hoopoe, hooters… Les Baux-de-Provence and its surroundings offer a fascinating fauna and flora, we are proud to participate in its protection.

Participating in sustainable development and positioning ourselves as an eco-responsible Domain seems essential to us, and raising awareness among our customers, employees and partners is just as much. It is with this in mind that we communicate, externally and internally. Eco-gestures (turning off the light when leaving a room, not overusing air conditioning or heating, using water bottles or glass bottles to avoid plastic bottles…) are a first step to better understand our collective efforts. As a player in tourism and catering, Baumanière is committed to promoting its actions and hopes to raise awareness.
