Dès la création de l’Oustau de Baumanière en 1945, Raymond Thuilier imagine une maison où l’on célèbre le terroir dans sa plus pure expression. Son petit-fils, Jean-André Charial, reprendra cet héritage avec la même passion : celle d’une cuisine sincère, proche de la nature, et connectée au sol qui la nourrit. Le potager, dès lors, n’est pas un simple décor mais un pilier fondateur de la philosophie de Baumanière.
L’histoire des potagers du domaine est indissociable de cette quête d’authenticité. D’abord discret, le jardin familial s’agrandit progressivement sous l’impulsion de Jean-André Charial, puis du chef Glenn Viel, qui en fait un terrain de jeu culinaire quotidien.
C’est en 1986 que Jean-André Charial conçoit pour la première fois à l’Oustau un menu entièrement dédié aux légumes. À une époque où la gastronomie française repose encore majoritairement sur les protéines animales, cette proposition audacieuse fait figure de révolution. Loin d’une simple alternative végétarienne, ce menu affirme que les légumes – cultivés sur place – peuvent être au cœur d’un repas gastronomique, à la hauteur des grandes tables étoilées.
Le menu Légumes est aujourd’hui devenu l’une des signatures de la maison. Il incarne un savoir-faire rare : celui de sublimer l’ordinaire pour en faire de l’exceptionnel. À quelques mètres de la cuisine étoilée de l’Oustau de Baumanière, le potager labellisé Ecocert s’étend sur plus de 1 500 m2. Cultivé selon les principes de l’agriculture biologique, il offre une incroyable variété de légumes, fruits, herbes aromatiques et fleurs comestibles. On y retrouve :
Ici, la biodiversité est protégée et encouragée. Aucun produit chimique n’est utilisé. Le paillage, la rotation des cultures, le compost maison et l’arrosage raisonné sont les garants de cet équilibre vertueux. Le Garlaban is a mountain located near the town of Aubagne, Marcel Pagnol’s hometown.
